Food Safety in our Stores
To ensure we safely provide the freshest, high-quality, wholesome products for you, all store, department and assistant managers must successfully complete our food safety training program. Publix uses nationally accredited Certified Food Safety training materials to certify our managers before they are placed into their management positions. Refresher training with testing is required every five years to maintain their certification.
All Publix Associates receive food safety education and training relative to the specific job task they perform. The fresh department associates (deli, bakery, meat, seafood, produce and Apron's) receive an additional level of education and training since they are involved in food processing and preparation.
There are several important focal points, including:
- Proper food handling practices
- Proper personal hygiene
- Appropriate food storage
- Effective cleaning and sanitation
- Effective pest management practices
Our stores are audited on a quarterly basis by an independent third party firm to review their food safety practices. Any necessary
retraining or education of associates is applied to maintain the safety of the products we provide. All of the information
presented in our food safety education and training materials for Publix Associates is consistent with the rules and
regulations used by our local, state and federal regulatory authorities for retail grocery stores.
